The furniture, including bespoke pieces crafted from locally grown elm, adds a touch of authenticity to the space.
The dining room, adorned with 200-year-old wood reclaimed from regional farmhouses, offers a warm and inviting atmosphere. The 4m-long buffet table, sculpted from layered fibreglass and bronze, adds a modern touch, while bespoke lighting fixtures and sliding doors crafted from delicate, woven bronze sheets provide a touch of elegance. The highlight of the design is the carpet, designed by Sprenger, which features an intricate motif depicting local flora and fauna and is produced in Denmark from pure wool.
Executive chef Martin Göschel brings a fresh approach to Swiss cuisine at Monti. His cooking style balances classic French techniques with a farm-to-table approach, using only Swiss meat and fish in his dishes. The menu changes with the seasons, featuring items like alpine strawberries, garden peas, char, and regional veal. Göschel's cooking favours both family-style sharing plates and classic preparations that highlight the natural quality of ingredients.
